THE PREPARATION OF MOROCCAN TEA
In Morocco, one of the usual customs is the preparation of tea, which is also served to guests as a sign of welcome and hospitality.
It is usually prepared and served in front of the guests.
Water is boiled and green tea is added, this first water is thrown away to wash the tea and diminish its bitter taste, then fresh mint leaves are added taking them to the bottom of the container, since if they float and remain on top, they will take a bitter taste, which the Moroccans call “burnt tea”.
The sugar is added in a proportion of 20 lumps per liter and is not mixed with a spoon. Whoever serves it, transfers the tea from its glass to a teapot several times, finally it is poured into the glasses from a certain height to make it foam.
The foam when serving it, is considered of good omen, since it is associated with luck and fortune.
